CHEF JOSH O’NEILL
Colleton River Club
MEET CHEF JOSH
Colleton River Club’s Executive Chef, Josh O’Neill, will tell you that his relationship with food and cooking was born in his childhood kitchen where he was given fundamental meal-prepping tasks (peeling potatoes and cleaning vegetables) as a 5-year old boy.
Growing up in Glen Ellyn, IL Chef Josh’s parents were clearly purposeful in keeping their young son engaged with the process and creativity of preparing a fine meal. Working as a family team to produce a nourishing meal, specialty dish, or as was often the case, a very large dinner party often required days of prep and choreography. Chef Josh cites these early family kitchen experiences as the spring-board for how he was inspired to embark on a career as Executive Chef extraordinaire.
With a Hotel Restaurant Management/Culinary Arts Degree from the University of South Carolina and a “practice makes perfect” philosophy, Chef Josh further honed his considerable culinary skills by working in a variety of restaurants on Hilton Head Island, Starwood Hotels, Hilton Hotels, in New Orleans, Austin Texas. Prior to landing his key role as Colleton River Club’s Executive Chef, he spent three years at The Golf Club at Indigo Run.
